Ingredients:

  • Brinjal 1 big
  • Tahini 1/4 cup
  • Minced Garlic 3 cloves
  • Lemon Juice 1/4 cup
  • Cumin 1 pinch
  • Salt to taste
  • Olive oil 1 tbsp
  • Chopped Parsley 1 tbsp
  • Black Olives 1/4 cup

Method:

  1. Heat grill pan, put brinjal and cook until it is soft.
  2. Then bake in oven for 15-20 minutes, take it out and cool it.
  3. Then remove skin, put in bowl, mash it and make paste.
  4. Then put tahini, garlic, lemon juice, olive oil and cumin and mix it nicely.
  5. Then put salt.
  6. Now put this mixture in serving bowl, put olives and parsley and serve it.
