Ingredients:
- Brinjal 1 big
- Tahini 1/4 cup
- Minced Garlic 3 cloves
- Lemon Juice 1/4 cup
- Cumin 1 pinch
- Salt to taste
- Olive oil 1 tbsp
- Chopped Parsley 1 tbsp
- Black Olives 1/4 cup
Method:
- Heat grill pan, put brinjal and cook until it is soft.
- Then bake in oven for 15-20 minutes, take it out and cool it.
- Then remove skin, put in bowl, mash it and make paste.
- Then put tahini, garlic, lemon juice, olive oil and cumin and mix it nicely.
- Then put salt.
- Now put this mixture in serving bowl, put olives and parsley and serve it.
