Hot & Sweet Fried Noodles by Zarnak Sidhwa

Ingredients:

  • Rice noodles (soaked) 200g
  • Oil for deep frying

For Sauce:

  • Oil 2 tbsp
  • Tofu (strips) 200 gm
  • Chopped Garlic 8
  • Chopped Spring Onion 8
  • Soya sauce 1/2 tsp
  • Brown Sugar 1 tsp
  • Vegetable 1-1/2 cup
  • Lemon Juice 1 tsp
  • Crushed Red Chilli 2 tsp

For Garnish:

  • Oil 3 tbsp
  • Beaten Eggs 2
  • Bean Sprouts 1 cup
  • Spring Onion 4
  • Chopped Fresh Red Chilli 2

Method:

  1. Put eggs in water and beat it.
  2. Now heat oil in wok and fry rice noodles until golden brown.
  3. Then take out in paper so that it absorbs oil.
  4. For sauce: Heat oil in wok, put tofu and cook until it is crisp.
  5. Then take out in plate.
  6. Now add garlic and spring onion, brown sugar, vegetable stock and crushed red chili and cook it until it becomes mixture.
  7. Now close stove and take out from one side.
  8. For garnish: Heat oil in pan, put beaten eggs, fry it and take out in plate.
  9. Now mix tofu in noodles nicely.
  10. Then stir it and make mixture.
  11. Then take out in serving bowl, sprinkle beans sprouts, spring onion, fried eggs and fresh red chili and serve.
