Pav Bhaji by Chef Irfan Wasti

Ingredients:

  • Carrot 1 cup
  • Potatoes 1/2 kg
  • Peas 1/2 cup
  • Cauliflower 1 cup
  • Onion thinly sliced 1 large
  • Crushed garlic 1 tbsp
  • Chop green chillies 2-3
  • Chopped tomatoes 2 cups
  • Butter 1 cup
  • Salt to taste
  • Turmeric 1 tsp
  • Red Chillies 1 tbsp
  • Garam Masala 1 tsp
  • Cumin Powder 1 tsp
  • Capsicum finely chop 1 medium
  • Water as required

Method:

  1. Boil potatoes, carrots, peas and cauliflower.
  2. Now make bhurta of potatoes.
  3. Then heat butter in fry pan, add onion and garlic.
  4. When onion is roasted, put tomatoes, salt, turmeric, red chilies, garam masala, cumin powder and capsicum and roast it.
  5. When masala is roasted and butter is separated, add potatoes bhurta and vegetables, put water and cook for 3-4 minutes until bhaji is thick.
  6. Heat butter on tawa, cut pav from center and fry on tawa.
  7. Now put bhaji on pav and serve.
