Paneer Chaat by Zarnak Sidhwa

Ingredients:
For Chutney:
- Green chilies 100 gm
- Roasted ground sesame 3 tbsp
- Jaggery 3 tbsp
- Thick tamarind pulp 150 ml
- Chili powder 1 tsp
- Turmeric powder 1/4 tsp
- Salt 2 tsp
- Sesame oil 5 tbsp
- Mustard seeds 1/2 tsp
- Fenugreek seeds 1/2 tsp
For Paneer Chaat:
- Paneer cubes 400 gm
- Lemon juice 2 tbsp
- Dried mint 2 tsp
- Roasted ground cumin 1/4 tsp
- Salt to taste
- Chaat masala 2 tsp
- Chopped coriander 2 tbsp
Method:
- For chutney: Stir sesame powder and jaggery into tamarind pulp.
- add chili powder and turmeric powder with salt.
- Simmer over moderate flame for 5 minutes.
- Heat 1 tbsp oil and saute mustard seeds and fenugreek seeds for few seconds before adding to tamarind mixture.
- Heat remaining oil.
- Fry slit green chilies until tender.
- Add tamarind mixture to pan.
- Stir to combine. Cool.
- For paneer chaat: Combine all ingredients.
- Season and pour over paneer.
- Chill before serving with chutney.
