Vegetable Chow Mein by Zarnak Sidhwa

Ingredients:
- Noodles 1 packet
- Salt 1/4 tsp
- Oil 1/2 tsp
- Sliced mushrooms 1 cup
- Finely chopped french beans 1/2 cup
- Grated carrots 1/4 cup
- Shredded cabbage 3/4 cup
- Chopped spring onion 1/2 cup
- Sliced capsicum 1/2 cup
- Sprouts 1/4 cup
- Tofu cubes 1/2 cup
- Finely chopped ginger 1 tsp
- Finely chopped garlic 1 tsp
- Finely chopped celery 1 stick
- Green chilies finely chopped 2-3
- Chili sauce 1 tsp
- Green chili sauce 1 tsp
- Soya sauce 3 tsp
- Tomato ketchup 1 tbsp
- Black pepper or White pepper 1/2 tsp
- Corn flour 2 tsp
- Vinegar 1/2 tsp
- Sesame oil 3 tbsp
- Toasted sesame seeds 1 tbsp
- Green onion to decorate
Method:
- Cook noodles in boiling salted water till done.
- Drain and pour little oil so that they remain separate.
- Keep aside.
- Heat oil in wok, saute green chilies, ginger and garlic.
- Add onions or spring onions.
- Add mushrooms and french beans.
- Stir and saute.
- Add carrots, cabbage and capsicum.
- Add soya sauce, red chili sauce, green chili sauce.
- Season with black pepper or white pepper and salt.
- Stir everything well and then add corn flour mixed with 2 tbsp cold water and stir well to thicken sauce.
- Add boiled noodles.
- Toss noodles with stir fried veggies.
- Lastly add vinegar.
- Garnish with toasted sesame seeds and green onions.
