Vegetable Chow Mein by Zarnak Sidhwa

Ingredients:

  • Noodles 1 packet
  • Salt 1/4 tsp
  • Oil 1/2 tsp
  • Sliced mushrooms 1 cup
  • Finely chopped french beans 1/2 cup
  • Grated carrots 1/4 cup
  • Shredded cabbage 3/4 cup
  • Chopped spring onion 1/2 cup
  • Sliced capsicum 1/2 cup
  • Sprouts 1/4 cup
  • Tofu cubes 1/2 cup
  • Finely chopped ginger 1 tsp
  • Finely chopped garlic 1 tsp
  • Finely chopped celery 1 stick
  • Green chilies finely chopped 2-3
  • Chili sauce 1 tsp
  • Green chili sauce 1 tsp
  • Soya sauce 3 tsp
  • Tomato ketchup 1 tbsp
  • Black pepper or White pepper 1/2 tsp
  • Corn flour 2 tsp
  • Vinegar 1/2 tsp
  • Sesame oil 3 tbsp
  • Toasted sesame seeds 1 tbsp
  • Green onion to decorate

Method:

  1. Cook noodles in boiling salted water till done.
  2. Drain and pour little oil so that they remain separate.
  3. Keep aside.
  4. Heat oil in wok, saute green chilies, ginger and garlic.
  5. Add onions or spring onions.
  6. Add mushrooms and french beans.
  7. Stir and saute.
  8. Add carrots, cabbage and capsicum.
  9. Add soya sauce, red chili sauce, green chili sauce.
  10. Season with black pepper or white pepper and salt.
  11. Stir everything well and then add corn flour mixed with 2 tbsp cold water and stir well to thicken sauce.
  12. Add boiled noodles.
  13. Toss noodles with stir fried veggies.
  14. Lastly add vinegar.
  15. Garnish with toasted sesame seeds and green onions.
