Spring Onion Pakora by Zarnak Sidhwa

Ingredients:

  • Chickpea flour 1-1/4 cups
  • Rice flour 2-3 tbsp
  • Ginger garlic paste 1/2 tsp
  • Red chili powder 1/2 tsp
  • Cumin powder 1 pinch
  • All spice powder 1 pinch
  • Finely chopped green onions 8-10 (green portion)
  • Finely chopped green onions 8-10 (white portion)
  • Curry leaves few
  • Salt to taste
  • Soda 1 pinch
  • Water as required
  • Oil deep frying

Method:

  1. Combine both flours with salt, soda, spring onion whites and greens, cumin powder, all spice powder, chili powder, ginger garlic paste and curry leaves.
  2. Add enough water and mix well that it forms thick batter.
  3. Heat oil, drop batter in oil to form small fritters.
  4. Deep fry till they turn golden brown.
  5. Use a ladle to keep turning fritters so that it cooks on all sides.
  6. Once they turn golden brown, remove them on absorbent paper.
  7. Serve.
