Samosa Kadhi Chaat by Zarnak Sidhwa

Ingredients:
For Dough:
- Flour 1/2 cup
- Ghee 2 tsp
- Salt to taste
For Filling:
- Potato boiled &cubes 1 cup
- Boiled peas 1/2 cup
- Capsicum chopped 2 tbsp
- Cumin seeds 1 tsp
- Ginger green chili paste 2 tsp
- Dried mango powder or Khatai powder 2 tsp
- Coriander & Cumin seeds 1 tsp
- All spice powder 1/2 tsp
- Oil 2 tbsp
- Salt to taste
- Oil for frying
Method:
- For samosa dough: Mix all ingredients in bowl and knead into firm dough using water. Knead well.
- Divide dough into 6 equal portions and roll each portion into an oval. Keep aside.
- For filling: Heat oil in pan and add cumin seeds.
- When they crackle, add ginger green chili paste.
- Saute for minute and add potato, green peas, capsicum, dried mango powder or khatai powder, coriander & cumin seed powder, all spice powder and salt.
- Mix well and mash lightly.
- Remove from flame, divide into 12 equal side.
- For samosa: Divide each samosa covering oval into 2 halves.
- Make cone from each part and stuff with filling.
- Seal edges carefully using little water.
- Repeat with remaining oval halves and filling to make more samosas.
- Deep fry in hot oil on slow flame until golden brown.
- Keep aside.
