Ingredients:

For Dough:

  • Flour 1/2 cup
  • Ghee 2 tsp
  • Salt to taste

For Filling:

  • Potato boiled &cubes 1 cup
  • Boiled peas 1/2 cup
  • Capsicum chopped 2 tbsp
  • Cumin seeds 1 tsp
  • Ginger green chili paste 2 tsp
  • Dried mango powder or Khatai powder 2 tsp
  • Coriander & Cumin seeds 1 tsp
  • All spice powder 1/2 tsp
  • Oil 2 tbsp
  • Salt to taste
  • Oil for frying

Method:

  1. For samosa dough: Mix all ingredients in bowl and knead into firm dough using water. Knead well.
  2. Divide dough into 6 equal portions and roll each portion into an oval. Keep aside.
  3. For filling: Heat oil in pan and add cumin seeds.
  4. When they crackle, add ginger green chili paste.
  5. Saute for minute and add potato, green peas, capsicum, dried mango powder or khatai powder, coriander & cumin seed powder, all spice powder and salt.
  6. Mix well and mash lightly.
  7. Remove from flame, divide into 12 equal side.
  8. For samosa: Divide each samosa covering oval into 2 halves.
  9. Make cone from each part and stuff with filling.
  10. Seal edges carefully using little water.
  11. Repeat with remaining oval halves and filling to make more samosas.
  12. Deep fry in hot oil on slow flame until golden brown.
  13. Keep aside.
