Ingredients:

  • Sela rice 1/2 kg
  • Mutton 700 gm
  • Yogurt 250 gm
  • Onion 1
  • Garlic paste 2 tbsp
  • Red chili powder 2 tbsp
  • All spice powder 1 tsp
  • Turmeric powder 1 tsp
  • Cinnamon 4 sticks
  • Cloves 4-6
  • Green cardamoms 5
  • Cumin seeds 2 tsp
  • Black cumin seeds 1/2 tsp
  • Coriander leaves 1/2 bunch
  • Mint leaves 1/2 bunch
  • Green chilies 10-12
  • Boiled eggs 6
  • Yellow food color as required
  • Dry fruits as required
  • Ghee or Oil 1 cup
  • Salt to taste

Method:

  1. For rice: Wash rice, strain it and soak for 2 hours.
  2. Now put water, black cumin and salt in pan and boil it.
  3. When aroma comes, add rice, boil it 1/4, strain it and keep it aside.
  4. For korma: Heat 1 cup oil in pan, add cinnamon, cloves, green cardamom and cumin seeds and crackle it.
  5. Now add garlic paste, fry it and also fry onion.
  6. Then add mutton and roast it.
  7. Put red chili powder, all spice powder and turmeric in yogurt, mix it nicely and roast it.
  8. Now add water as required and cook until meat tender.
  9. When meat tender and gravy is thick, remove it.
  10. For layer: Put eggs in yellow food color water and leave it.
  11. When color of egg changes, take it out and fry it.
  12. Spread korma in pot.
  13. Put half rice, eggs, green chilies, coriander leaves and mint leaves.
  14. Put remaining korma.
  15. Then put remaining rice, boiled eggs, yellow food color and dry fruits and simmer it.
  16. When simmer is completed, take out in dish and serve.
