Bread Tartlets by Zarnak Sidhwa

Ingredients:
- White or Brown bread 6 slices
- Cheese grated 3-4 tbsp
- Potato (boiled and cubed) 1
- Onion chopped 1
- Tomato chopped 1
- Green or Black olives 6
- Red chili powder 1/2 tsp
- Dry basil 1/2 tsp
- Dry oregano 1/2 tsp
- Salt to taste
- Oil or Melted butter as required
Method:
- Trim edges of bread.
- Flatten each piece with rolling pin.
- Place bread in muffin tin.
- Brush with some oil or melted butter.
- Secure piece of crumpled foil on each bread.
- Bake at 190 degrees C for 10-12 minutes till bread are crisp and browned.
- Remove muffin tin from over and discard foil.
- Put potato, tomato and onion on bread.
- Sprinkle dry herbs and chili powder along with some salt.
- Top up with grated cheese.
- Put olives and bake again in oven for 3-5 minutes till cheese gets melted.
- Garnish with fresh coriander or parsley and serve.
