Bread Tartlets by Zarnak Sidhwa

Ingredients:

  • White or Brown bread 6 slices
  • Cheese grated 3-4 tbsp
  • Potato (boiled and cubed) 1
  • Onion chopped 1
  • Tomato chopped 1
  • Green or Black olives 6
  • Red chili powder 1/2 tsp
  • Dry basil 1/2 tsp
  • Dry oregano 1/2 tsp
  • Salt to taste
  • Oil or Melted butter as required

Method:

  1. Trim edges of bread.
  2. Flatten each piece with rolling pin.
  3. Place bread in muffin tin.
  4. Brush with some oil or melted butter.
  5. Secure piece of crumpled foil on each bread.
  6. Bake at 190 degrees C for 10-12 minutes till bread are crisp and browned.
  7. Remove muffin tin from over and discard foil.
  8. Put potato, tomato and onion on bread.
  9. Sprinkle dry herbs and chili powder along with some salt.
  10. Top up with grated cheese.
  11. Put olives and bake again in oven for 3-5 minutes till cheese gets melted.
  12. Garnish with fresh coriander or parsley and serve.
