Thai Chicken Pasta Salad by Zarnak Sidhwa

Ingredients:
- Roasted chicken breasts 2
- Boiled spiral pasta 2 cups
- Creamy peanut butter 3/4 cup
- Coconut milk 3/4 cup
- Chopped coriander 1/4 cup
- Lemon juice 1/4 cup
- Sugar 1 tbsp
- Salt 3/4 tsp
- Cayenne pepper 1/4 tsp
- Cucumber sliced 1
- Spring onions thinly slices 6
Method:
- Bring water to boiling point, add in salt and oil, add spiral pasta, drain once done and oil so they don't stick.
- Meanwhile, in bowl whisk together peanut butter, coconut milk, coriander, lemon juice, sugar, salt and cayenne pepper until smooth.
- Add chicken, cucumber and spring onions to peanut butter mixture; stir to coat.
- In bowl, combine chicken mixture and pasta, toss to combine.
- Serve chilled.
