Kharay Masalay Ky Pasanday by Chef Gulzar

Ingredients:

  • Pasanday 1/2 kg
  • Garlic paste 1 tbsp
  • Finely chopped onion 2
  • Whole peppercorns 1 tsp
  • Cumin seeds 1 tsp
  • Black cardamoms 3-4
  • Cinnamon 2-3
  • Cloves 4-6
  • Bay leaves 2-3
  • Crushed red chilies 1 tbsp
  • Green chilies 5-6
  • Coriander leaves 1/2 bunch
  • Ginger finely Julian 1 inch
  • Oil 4-5 tbsp
  • Salt to taste

Method:

  1. Heat oil in pan, add black peppercorns, cumin seeds, black cardamoms, cloves and bay leaves and crackle it.
  2. Then add onion and garlic and fry it,
  3. When onion is brown, add pasanday and roast it.
  4. Now add red chilies, mix it nicely and roast it.
  5. When pasanday tender, add green chilies and coriander leaves and simmer it.
  6. When simmer is completed, remove from stove and serve in dish.
