Blueberry Coffee Cake by Shireen Anwer

Ingredients:

  • Butter softened 1/3 cup
  • Sugar 3/4 cup
  • Eggs 2
  • Vanilla essence 1 tsp
  • Flour 2 cups
  • Baking powder 1 tsp
  • Baking soda 1 tsp
  • Salt 1/4 tsp
  • Cream 1 cup
  • Blueberries 1/2-3/4 cup
  • Fresh strawberries 1 cup

For Topping:

  • Sugar 3 tbsp
  • Cinnamon 1 tsp
  • Icing sugar 2 tsp

Method:

  1. Beat butter and sugar in mixing bowl for 2 minutes till it becomes danedar.
  2. Now beat vanilla essence and eggs.
  3. Then mix flour, baking soda, baking powder and salt in separate bowl.
  4. Now add this dry mixture in egg mixture and beat it nicely.
  5. Then put cream and fold blueberries.
  6. Coat 10 inch pan with cooking spray and sprinkle flour.
  7. Now take 1/2 spoon of mixture and put in pan.
  8. For topping: Mix sugar, cinnamon and icing sugar and spread half quantity in pan.
  9. Now spread these layers.
  10. Then bake on 180 degrees C for 45-50 minutes and cool on wire rack for 10 minutes.
  11. In end, sprinkle icing sugar.
