Blueberry Coffee Cake by Shireen Anwer

Ingredients:
- Butter softened 1/3 cup
- Sugar 3/4 cup
- Eggs 2
- Vanilla essence 1 tsp
- Flour 2 cups
- Baking powder 1 tsp
- Baking soda 1 tsp
- Salt 1/4 tsp
- Cream 1 cup
- Blueberries 1/2-3/4 cup
- Fresh strawberries 1 cup
For Topping:
- Sugar 3 tbsp
- Cinnamon 1 tsp
- Icing sugar 2 tsp
Method:
- Beat butter and sugar in mixing bowl for 2 minutes till it becomes danedar.
- Now beat vanilla essence and eggs.
- Then mix flour, baking soda, baking powder and salt in separate bowl.
- Now add this dry mixture in egg mixture and beat it nicely.
- Then put cream and fold blueberries.
- Coat 10 inch pan with cooking spray and sprinkle flour.
- Now take 1/2 spoon of mixture and put in pan.
- For topping: Mix sugar, cinnamon and icing sugar and spread half quantity in pan.
- Now spread these layers.
- Then bake on 180 degrees C for 45-50 minutes and cool on wire rack for 10 minutes.
- In end, sprinkle icing sugar.
