Death By Chocolate Mousse by Zarnak Sidhwa

Ingredients:
- Chocolate cookies crushed 2 cup
- Butter 1/4 cup
- Cream 1 cup
- Chocolate chips 1 cup
- Vanilla essence 1 tsp
- Salt 1 pinch
- Cream 1 cup
- Caster sugar 1/4 cup
- Cream 2 cup
- Chilled caster sugar 1/4 cup
Method:
- Mix crushed cookies and softened butter.
- Press mixture evenly into greased 9 inch spring form pan.
- Bake in preheated oven at 180 degrees C for 5 minutes, then allow to cool.
- Combine 1 cup cream, chocolate, vanilla essence and salt, in top of double boiler.
- Heat until chocolate in fully melted and mixture is smooth.
- Pour chocolate mixture into bowl and cool to room temperature, stirring occasionally.
- In large bowl, beat 2 cups chilled cream with 1/4 cup sugar.
- Beat until stiff peaks form.
- Fold whipped cream.
