Egg Salad by Zarnak Sidhwa

Ingredients:

  • Boiled eggs 6
  • Spring onions 2
  • Capsicum chopped 1
  • Cream 1 tbsp
  • Jalapeno chopped 1
  • Green chilies chopped 2
  • Black olives 6
  • Salt and Pepper to taste
  • Mustard paste 1/2 tsp
  • Mayonnaise as required
  • Vinegar or Lemon juice 1/2 tsp
  • Finely chopped celery 1/4 cup

Method:

  1. Mix mayonnaise, cream, salt, pepper, mustard and vinegar or lemon juice till well blended.
  2. Add roughly chopped eggs and all rest to the ingredients.
  3. Mix well and serve with soft dinner rolls.
  4. This is also excellent as sandwich filling with shredded lettuce.
  5. Also as starter, serve on lettuce shreds in individual serving glasses.
