Homemade Graham Crackers by Zarnak Sidhwa

Ingredients:

  • Flour 2-1/2 cup
  • Sugar 1 cup
  • Baking soda 1 tsp
  • Salt 1/2 tsp
  • Butter 1/2 cup
  • Honey 1/3 cup
  • Milk 1/4 cup
  • Vanilla essence 1 tbsp
  • Sugar 3 tbsp
  • Cinnamon 1 tbsp

Method:

  1. Mix flour, brown sugar, baking soda and salt.
  2. Add cold cubed butter and mix on low until mixture is consistency of coarse meal.
  3. In small bowl, whisk honey, milk and vanilla essence.
  4. Add to flour mixture and mix on low until dough comes together.
  5. Divide in half and wrap in plastic.
  6. Chill until firm about 2 hours in fridge.
  7. Once chilled, turn dough out onto lightly floured work surface and roll each dough sheet into long rectangle about 15x10 inch and 1/8 inch thick.
  8. Using knife or fluted pastry wheel, cut dough rectangle into 4 columns and 3 rows.
  9. Poke holes into crackers using fork or toothpick.
  10. In small bowl, combine 3 tbsp of sugar and 1 tsp cinnamon.
  11. Sprinkle on top before baking.
  12. Bake at 180 degrees C for 15-20 minutes, until slightly browned.
  13. Allow to cool for 10 minutes.
