Homemade Graham Crackers by Zarnak Sidhwa

Ingredients:
- Flour 2-1/2 cup
- Sugar 1 cup
- Baking soda 1 tsp
- Salt 1/2 tsp
- Butter 1/2 cup
- Honey 1/3 cup
- Milk 1/4 cup
- Vanilla essence 1 tbsp
- Sugar 3 tbsp
- Cinnamon 1 tbsp
Method:
- Mix flour, brown sugar, baking soda and salt.
- Add cold cubed butter and mix on low until mixture is consistency of coarse meal.
- In small bowl, whisk honey, milk and vanilla essence.
- Add to flour mixture and mix on low until dough comes together.
- Divide in half and wrap in plastic.
- Chill until firm about 2 hours in fridge.
- Once chilled, turn dough out onto lightly floured work surface and roll each dough sheet into long rectangle about 15x10 inch and 1/8 inch thick.
- Using knife or fluted pastry wheel, cut dough rectangle into 4 columns and 3 rows.
- Poke holes into crackers using fork or toothpick.
- In small bowl, combine 3 tbsp of sugar and 1 tsp cinnamon.
- Sprinkle on top before baking.
- Bake at 180 degrees C for 15-20 minutes, until slightly browned.
- Allow to cool for 10 minutes.
