Chicken Biryani by Zarnak Sidhwa

Ingredients:
For Chicken:
- Oil 1 tbsp
- Onion sliced 1
- Garlic crushed 2 cloves
- Chopped ginger 1 tsp
- Chicken breasts cubes 1/2 kg
- Chicken stock cubes 2
- Tomatoes 2
- Yogurt 1/2 cup
- Lemon juice 1 tsp
- Tomato paste 2 tbsp
- All spice powder 1-1/2 tbsp
- Turmeric 1/2 tsp
- Coriander leaves 2 tbsp
- Mint chopped 2 tbsp
Method:
- Boil soaked rice with water, once it boils, cover and simmer for 15 minutes or until rice is cooked. Set aside.
- Heat oil and brown onion.
- Add ginger and garlic and stir until fragrant.
- Add chicken and stir until it is sauted.
- Add stock, tomato, yogurt, lemon juice, tomato paste and spices.
- Bring to boil and simmer for 10 minutes and cook till chicken is done.
- In deep pan, place half quantity of prepared rice and chicken mixture on top.
- Sprinkle chopped coriander and mint over chicken mixture, cover top with remaining rice.
- Cover firmly over lid and simmer on tawa over low heat until rice is completely cooked.
