Chicken Biryani by Zarnak Sidhwa

Ingredients:

  • Rice 2-1/2 cup

For Chicken:

  • Oil 1 tbsp
  • Onion sliced 1
  • Garlic crushed 2 cloves
  • Chopped ginger 1 tsp
  • Chicken breasts cubes 1/2 kg
  • Chicken stock cubes 2
  • Tomatoes 2
  • Yogurt 1/2 cup
  • Lemon juice 1 tsp
  • Tomato paste 2 tbsp
  • All spice powder 1-1/2 tbsp
  • Turmeric 1/2 tsp
  • Coriander leaves 2 tbsp
  • Mint chopped 2 tbsp

Method:

  1. Boil soaked rice with water, once it boils, cover and simmer for 15 minutes or until rice is cooked. Set aside.
  2. Heat oil and brown onion.
  3. Add ginger and garlic and stir until fragrant.
  4. Add chicken and stir until it is sauted.
  5. Add stock, tomato, yogurt, lemon juice, tomato paste and spices.
  6. Bring to boil and simmer for 10 minutes and cook till chicken is done.
  7. In deep pan, place half quantity of prepared rice and chicken mixture on top.
  8. Sprinkle chopped coriander and mint over chicken mixture, cover top with remaining rice.
  9. Cover firmly over lid and simmer on tawa over low heat until rice is completely cooked.
