Ingredients:

  • Eggplant 1/2 kg
  • Cumin crushed 1 tbsp
  • Coriander crushed 2 tbsp
  • Red pepper crushed 1 tbsp
  • Turmeric 1 tsp
  • Ginger garlic paste 1 tbsp
  • Salt to taste
  • Tamarind pulp 2 tbsp
  • Curry leaves few
  • Green chilies 6
  • Mustard oil 1 cup
  • Almonds 10
  • Fenugreek seeds few
  • Onion seeds 1 tsp

Method:

  1. Wash eggplant and mark cut in shape of it.
  2. Now heat oil, fry eggplant and take it out.
  3. Then put ginger garlic paste, red pepper, cumin, coriander, turmeric, salt, curry leaves, fenugreek seeds and green chilies and roast it lightly.
  4. Then put fried eggplant, onion seeds, almonds and tamarind pulp and simmer it on low flame.
  5. Masalaydar baigan is ready.
