Ingredients:
- Eggplant 1/2 kg
- Cumin crushed 1 tbsp
- Coriander crushed 2 tbsp
- Red pepper crushed 1 tbsp
- Turmeric 1 tsp
- Ginger garlic paste 1 tbsp
- Salt to taste
- Tamarind pulp 2 tbsp
- Curry leaves few
- Green chilies 6
- Mustard oil 1 cup
- Almonds 10
- Fenugreek seeds few
- Onion seeds 1 tsp
Method:
- Wash eggplant and mark cut in shape of it.
- Now heat oil, fry eggplant and take it out.
- Then put ginger garlic paste, red pepper, cumin, coriander, turmeric, salt, curry leaves, fenugreek seeds and green chilies and roast it lightly.
- Then put fried eggplant, onion seeds, almonds and tamarind pulp and simmer it on low flame.
- Masalaydar baigan is ready.
