Mixed Sabzi by Rida Aftab

Ingredients:
- Potatoes 2
- Brinjals 2
- Cauliflower 250 gm
- Okra 250 gm
- Carrots 250 gm
- Green chilies 6
- Green coriander 1/2 bunch
- Green peas 1 cup
- Chickpeas boiled 1 cup
- Garlic 4 cloves
- Tomatoes 1/2 kg
- Red chili powder 2 tsp
- Cumin seeds 2 tsp
- Turmeric 1 tsp
- Mustard seeds 1 tsp
- Garam masala 1 tsp
- Salt 1 tsp
- Oil 1 cup
Method:
- Boil tomatoes and grind it.
- Now fry potatoes, brinjals, cauliflower, okra and carrots and take it out.
- Put tomatoes in remaining oil.
- Also add garlic, red chili powder, cumin seeds, turmeric, salt, mustard seeds and garam masala and roast it.
- Then put fried vegetables, green chilies, green coriander and chickpeas and simmer it for 20 minutes.
- Mixed sabzi is ready.
