12 Masala Chicken by Chef Gulzar

Ingredients:

  • Chicken with bone 1/2 kg
  • Garlic paste 1 tbsp
  • Tomatoes 3-4
  • Tamarind pulp 1/2 cup
  • Mustard seeds 1/2 tsp
  • Green chilies 4-5
  • Coriander leaves 1/2 bunch
  • Oil 2-3 tbsp
  • Salt to taste

For 12 Masala:

  • Coconut 3-4 tbsp
  • Coriander seeds 1 tsp
  • Onion 1
  • Garlic 3-4 cloves
  • Ginger 1 inch
  • Whole red chilies 5-6
  • Whole black pepper 1 tsp
  • Turmeric powder 1 tsp
  • Cumin seeds 1/2 tsp
  • Fenugreek seeds 1/2 tsp
  • Carom seeds 1/3 tsp
  • Curry leaves 3-4

Method:

  1. For 12 masala: Put all ingredients in pan and roast it.
  2. Then put in blender, grind it and keep it aside.
  3. Then heat oil in second pan and fry mustard seeds and garlic paste.
  4. Now add chicken and fry it.
  5. When color changes, mix tomatoes and cook it.
  6. When tomatoes tender, add 12 masala and salt and mix it.
  7. Now add water as required.
  8. When chicken tender, add green chilies and tamarind pulp and mix it.
  9. When chicken is ready, dish out it, garnish with coriander leaves and serve.
