Mango Colada Mousse by Shireen Anwer

Ingredients:
- Mangoes chopped 1 cup
- Eggs separated 3
- Gelatin 1-1/2 tsp
- Caster sugar 4 oz
- Mango juice 1/4 cup
- Fresh cream whipped 6 oz
- Coconut milk 1/2 cup
- Desiccated coconut 3 tbsp
Method:
- Beat egg yolks and caster sugar until light and fluffy.
- Now dissolve gelatin in mango juice and add in coconut milk with egg mixture.
- Then beat egg whites in separate bowl until stiff.
- Then put cream in 2 bowls and beat it.
- Now mix three mixtures with coconut.
- Now spread mango in serving bowl and put mousse mixture.
- Then cool it until it sets.
- In end, decorate with whipped cream and coconut.
