Keralan Style Vegetable Stew by Zarnak Sidhwa

Ingredients:
- Vegetables (Carrot, Beans, Potato) 1 cup
- Onion sliced 1
- Green chilies 4
- Ginger (finely chopped) 1 tsp
- Garlic (finely chopped) 1 tsp
- Coconut milk 2 cups
- Cloves 2
- Cinnamon 1 inch
- Cardamom 1
- Salt to taste
- Oil 1 tbsp
To Temper:
Method:
- Heat oil in wok.
- Add cloves, cardamom and cinnamon and saute.
- Then add onions, ginger and garlic and saute.
- Add chopped vegetables, little coconut milk and very little water and cook until vegetables are done.
- Add salt, give it mix.
- Then add remaining coconut milk, mix it and immediately turn off flame.
- For temper: Heat oil and add curry leaves.
- Add temper to vegetable stew and mix well.
