Fudgy Chocolate Cake Bars by Zarnak Sidhwa

Ingredients:
- Chocolate 8 oz
- Butter 170 gm
- Sugar 1 cup
- Flour 1/4 cup
- Eggs 6
For Frosting:
- Chocolate 8 oz
- Cream 1 cup
Method:
- Melt 8 oz chocolate in double boiler (bowl set over pan of simmering water).
- Stir in butter until it's melted.
- Transfer melted mixture to bowl and add sugar and flour.
- Lightly beat egg yolks and stir them into bowl.
- Beat egg whites until they are stiff.
- Fold stiff egg whites into chocolate mixture.
- Pour batter into greased and lined bar pan and bake at 180 degrees C for about 30-35 minutes.
- Then cake should have thin crust on top when it's done, but inner texture might appear under baked.
- Then cake settles and firm up as it cooks.
- It's meant to be thick and fudgy.
- For frosting: Melt chocolate again in double boiler with cream, stirring until just melted.
- Let frosting cool slightly and gently spread frosting over cake bars.
- To set frosting, let it cool in refrigerator.
