Fudgy Chocolate Cake Bars by Zarnak Sidhwa

Ingredients:

  • Chocolate 8 oz
  • Butter 170 gm
  • Sugar 1 cup
  • Flour 1/4 cup
  • Eggs 6

For Frosting:

  • Chocolate 8 oz
  • Cream 1 cup

Method:

  1. Melt 8 oz chocolate in double boiler (bowl set over pan of simmering water).
  2. Stir in butter until it's melted.
  3. Transfer melted mixture to bowl and add sugar and flour.
  4. Lightly beat egg yolks and stir them into bowl.
  5. Beat egg whites until they are stiff.
  6. Fold stiff egg whites into chocolate mixture.
  7. Pour batter into greased and lined bar pan and bake at 180 degrees C for about 30-35 minutes.
  8. Then cake should have thin crust on top when it's done, but inner texture might appear under baked.
  9. Then cake settles and firm up as it cooks.
  10. It's meant to be thick and fudgy.
  11. For frosting: Melt chocolate again in double boiler with cream, stirring until just melted.
  12. Let frosting cool slightly and gently spread frosting over cake bars.
  13. To set frosting, let it cool in refrigerator.
