Prawn Rissois by Zarnak

Ingredients:
For Pastry:
- Flour 240 gm
- Water 2 cups
- Salt 1/2 tsp
- Butter 1 tbsp
For Filling:
- Prawns 1 cup
- Oil 2 tbsp
- Chopped onions 1-1/2 cup
- Salt and Pepper to taste
- Corn flour 1 tbsp
- Grated cheese 1 tbsp
- Oil for deep fry
- Egg lightly beaten 1
- Bread crumbs for coating
Method:
- Sieve flour.
- Place water in pan with salt and bring to boil.
- Add butter, lower heat and add flour.
- Stir and beat to mix will it forms ball.
- Remove form heat and allow to cool enough to handle.
- Knead well.
- Chop prawns finely.
- Heat 2 tbsp oil and fry onions till transparent.
- Add prawns and cook until light pink.
- Stir in water, salt and pepper and cook for 2 minutes.
- Mix corn flour with little water and stir into mixture.
- Cook till thick and creamy.
- Remove from heat and add cheese.
- Mix well and allow to cool.
- Roll out pastry about 1/8 inch thick.
- Cut around about 2 inches in diameter.
- Place 1 tbsp filling on each round, fold over and moisten with water to seal.
- Heat oil in deep frying pan.
- Dip rissois in beaten egg, roll in bread crumbs and deep fry.
- Drain on paper towel and serve hot.
