Cheese Stuffed Kachori by Chef Tahir Chaudhry

Ingredients:
For Dough:
- Flour 1 cup
- Salt 1/2 tsp
- Ghee 1/4 cup
- Cold water for dough
For Filling:
- Cheddar cheese 1/2 cup
- Cumin 1 tsp
- Crushed red chili 1 tbsp
- All spice 1 tsp
- Dry mango powder 1 tbsp
- Gram flour 2 tbsp
- Oil 1 tbsp
- Salt to taste
Method:
- For dough: Mix flour, salt and ghee and knead with little water.
- Now knead for 5-7 minutes nicely.
- Now divide dough into 12 portions and put wet cloth.
- For filling: Heat oil in pan, put cumin, red chili, all spice, dry mango powder, gram flour and salt, stir fry for 3-4 minutes until masala is cooked nicely.
- Now mix cheddar cheese.
- Then roll each portion of dough in round.
- Now put filling in center of each portion and roll it.
- Then spread dough on filling, fold edges and press it.
- Deep fry kachori in hot oil on low flame until golden.
