Cheese Stuffed Kachori by Chef Tahir Chaudhry

Ingredients:

For Dough:

  • Flour 1 cup
  • Salt 1/2 tsp
  • Ghee 1/4 cup
  • Cold water for dough

For Filling:

  • Cheddar cheese  1/2 cup
  • Cumin 1 tsp
  • Crushed red chili 1 tbsp
  • All spice 1 tsp
  • Dry mango powder 1 tbsp
  • Gram flour 2 tbsp
  • Oil 1 tbsp
  • Salt to taste

Method:

  1. For dough: Mix flour, salt and ghee and knead with little water.
  2. Now knead for 5-7 minutes nicely.
  3. Now divide dough into 12 portions and put wet cloth.
  4. For filling: Heat oil in pan, put cumin, red chili, all spice, dry mango powder, gram flour and salt, stir fry for 3-4 minutes until masala is cooked nicely.
  5. Now mix cheddar cheese.
  6. Then roll each portion of dough in round.
  7. Now put filling in center of each portion and roll it.
  8. Then spread dough on filling, fold edges and press it.
  9. Deep fry kachori in hot oil on low flame until golden.
