Hyderabadi Mutton Curry by Shireen Anwer

Ingredients:

  • Mutton with bones 1/2 kg
  • Oil 1 cup
  • Onions chopped 2
  • Ginger garlic 1 tbsp
  • Red chili powder 3 tsp
  • Turmeric 1 tsp
  • Mustard seeds 1 tsp
  • Fenugreek seeds 1/2 tsp
  • Salt 2 tsp
  • Curd whipped 2 cups
  • Gram flour 1 cup
  • Water 2 cups

For Bhagar:

  • Oil 1/4 cup
  • Onions sliced 1/2 cup
  • Whole red chilies 8
  • Curry leaves 10-15
  • Cumin seeds 1 tsp
  • Red chili powder 1/2 tsp
  • Green chilies large 4

Method:

  1. Heat oil in pan and fry onions until light golden.
  2. Now put ginger garlic and stir it nicely.
  3. Then add mutton and cook for few minutes.
  4. Now put red chili powder, turmeric, fenugreek seeds, mustard seeds, salt and curd and cook for 10 minutes.
  5. Then add green chilies.
  6. When oil comes up, put gram flour mixture with extra water.
  7. Now cover it and cook on low flame for 1 hour till mutton tender and gravy is thick.
  8. Then give bhagar.
