Hyderabadi Mutton Curry by Shireen Anwer

Ingredients:
- Mutton with bones 1/2 kg
- Oil 1 cup
- Onions chopped 2
- Ginger garlic 1 tbsp
- Red chili powder 3 tsp
- Turmeric 1 tsp
- Mustard seeds 1 tsp
- Fenugreek seeds 1/2 tsp
- Salt 2 tsp
- Curd whipped 2 cups
- Gram flour 1 cup
- Water 2 cups
For Bhagar:
- Oil 1/4 cup
- Onions sliced 1/2 cup
- Whole red chilies 8
- Curry leaves 10-15
- Cumin seeds 1 tsp
- Red chili powder 1/2 tsp
- Green chilies large 4
Method:
- Heat oil in pan and fry onions until light golden.
- Now put ginger garlic and stir it nicely.
- Then add mutton and cook for few minutes.
- Now put red chili powder, turmeric, fenugreek seeds, mustard seeds, salt and curd and cook for 10 minutes.
- Then add green chilies.
- When oil comes up, put gram flour mixture with extra water.
- Now cover it and cook on low flame for 1 hour till mutton tender and gravy is thick.
- Then give bhagar.
