Baigan Ka Achar by Zubaida Tariq

Ingredients:
- Eggplants 1/2 kg
- Dry red chilies 10
- Garlic 8 cloves
- Chopped ginger 2 tbsp
- Cumin seeds 1 tbsp
- Tamarind 250 gm
- Mustard oil 2 cups
- Jaggery 2 tbsp
- Warm water 2 cups
- White vinegar 1 cup
- Mustard seeds 2 tsp
- Onion seeds 1 tsp
- Fenugreek seeds few
- Curry leaves few
- Green chilies 8
- Salt to taste
Method:
- Cut eggplants and put salt.
- Soak tamarind in 2 cup hot water.
- Strain it after 10 minutes and take out when thick.
- Mix red chilies, garlic, ginger, cumin seeds and vinegar and grind it.
- Then heat mustard oil in wok and put mustard seeds and fenugreek seeds.
- Add grinded masala after 2 minutes and roast it slightly.
- Then put eggplants, green chilies, curry leaves, onion seeds, tamarind pulp and jaggery and cook it.
- When eggplants tender, put onion seeds and green chilies and simmer it.
- When baigan ka achar cools, safe in airtight jar.
