Ingredients:

  • Eggplants 1/2 kg
  • Dry red chilies 10
  • Garlic 8 cloves
  • Chopped ginger 2 tbsp
  • Cumin seeds 1 tbsp
  • Tamarind 250 gm
  • Mustard oil 2 cups
  • Jaggery 2 tbsp
  • Warm water 2 cups
  • White vinegar 1 cup
  • Mustard seeds 2 tsp
  • Onion seeds 1 tsp
  • Fenugreek seeds few
  • Curry leaves few
  • Green chilies 8
  • Salt to taste

Method:

  1. Cut eggplants and put salt.
  2. Soak tamarind in 2 cup hot water.
  3. Strain it after 10 minutes and take out when thick.
  4. Mix red chilies, garlic, ginger, cumin seeds and vinegar and grind it.
  5. Then heat mustard oil in wok and put mustard seeds and fenugreek seeds.
  6. Add grinded masala after 2 minutes and roast it slightly.
  7. Then put eggplants, green chilies, curry leaves, onion seeds, tamarind pulp and jaggery and cook it.
  8. When eggplants tender, put onion seeds and green chilies and simmer it.
  9. When baigan ka achar cools, safe in airtight jar.
