Eggless Vanilla Cake by Zarnak Sidhwa

Ingredients:
- Flour 1-1/2 cup
- Flour dusting 1 tbsp
- Salt 1/4 tsp
- Baking soda 3/4 tsp
- Baking powder 1-1/2 tsp
- Condensed milk 3/4 can
- Milk 1 cup
- Butter 1/4 cup
- Oil 1/4 cup
- White vinegar 1 tbsp
- Vanilla essence 1-1/2 tsp
- Chopped almonds 2 tbsp
- Raisins 2 tbsp
Method:
- I bowl, sift flour, salt, baking powder and baking soda and set aside.
- In other bowl, add butter, oil, milk,condensed milk and vanilla essence.
- Whisk them together to make it creamy and soft.
- Add vinegar and combine well.
- Add sifted dry ingredients little by little and combine well gently.
- Add few spoons of milk to mix well.
- After batter is ready, add almonds and raisins.
- Simply fold them in batter, but do not whisk them.
- Transfer batter into greased and floured baking pan and give it gentle tap couple of times so that air bubbles trapped inside batter escape.
- Place baking pan in preheated oven for 25-30 minutes.
- Cool and serve.
