Southern Salad by Zarnak Sidhwa

Ingredients:
- Shell pasta 2 cups
- Oil 1/3 cup
- Lemon juice 1/4 cup
- Chili powder 2 tbsp
- Ground cumin 2 tsp
- Salt 1/2 tsp
- Garlic crushed 2 cloves
- Corn 1 cup
- Red kidney beans 1 cup
- Chopped capsicum 1
- Coriander leaves 1/2 cup
- Chopped tomatoes 1 cup
Method:
- Bring large pot of lightly salted water and few drops of oil to boil.
- Add pasta and cook for 8 to 10 minutes or until done and drain.
- In large bowl combine oil, lemon juice, chili powder, cumin, salt and garlic.
- Stir in pasta and set aside to cool to room temperature, stirring occasionally.
- Stir in corn, beans, capsicum and 1/2 of coriander leaves.
- Spoon onto platter and garnish with tomatoes and remaining coriander.
- Serve chilled or at room temperature.
