Southern Salad by Zarnak Sidhwa

Ingredients:

  • Shell pasta 2 cups
  • Oil 1/3 cup
  • Lemon juice 1/4 cup
  • Chili powder 2 tbsp
  • Ground cumin 2 tsp
  • Salt 1/2 tsp
  • Garlic crushed 2 cloves
  • Corn 1 cup
  • Red kidney beans 1 cup
  • Chopped capsicum 1
  • Coriander leaves 1/2 cup
  • Chopped tomatoes 1 cup

Method:

  1. Bring large pot of lightly salted water and few drops of oil to boil.
  2. Add pasta and cook for 8 to 10 minutes or until done and drain.
  3. In large bowl combine oil, lemon juice, chili powder, cumin, salt and garlic.
  4. Stir in pasta and set aside to cool to room temperature, stirring occasionally.
  5. Stir in corn, beans, capsicum and 1/2 of coriander leaves.
  6. Spoon onto platter and garnish with tomatoes and remaining coriander.
  7. Serve chilled or at room temperature.
