Kuku Paka by Zarnak Sidhwa

Ingredients:
- Onion chopped 1
- Oil 3 tbsp
- Chicken 1 kg
- Tomato finely chopped 1
- Crushed garlic & ginger 1 tbsp
- Red chilies crushed 1 tsp
- Chili powder 1/2 tsp
- Salt 1-1/2 tsp
- Cumin powder 1/2 tsp
- Coriander powder 1/2 tsp
- Turmeric powder 1/4 tsp
- Bay leaves 2
- Coconut milk powder 100 gm
- Boiled eggs 3
- Boiled or Fried potatoes 3
- Cream 1/2 cup
- Coriander leaves 1 tbsp
Method:
- Saute onions in hot oil until soft.
- Add chicken and cook it.
- Then add tomatoes, ginger, garlic, red chilies and remaining ingredients.
- Cook for 2 minutes and add water.
- Continue cooking until chicken is almost done.
- Mix coconut milk powder with 1/2 cup water and add to mixture.
- Add more water id necessary, gravy should not cover chicken.
- Continue cooking till chicken is done and gravy is reduced to desired thickness.
- Add eggs, potatoes, cream and coriander leaves.
- Cook for 2 minutes more.
- Serve with rice.
