Ingredients:
- Boiled eggs 6-8
- Onion (large chopped) 1
- Oil 1/2 cup
- Potatoes (peeled & cubes) 2
- Ginger garlic 1 tsp
- Tomatoes chopped 4
- Salt 1-1/2 tsp
- Fenugreek seeds 1 tsp
- Red chili powder 1/2 tsp
- All spice 1/2 tsp
- Cumin (roasted & crushed) 1 tsp
- Turmeric 1/2 tsp
- Coriander leaves chopped 1 bunch
- Green chilies chopped few
- Coriander crushed 1 tsp
Method:
- Heat oil and fry onion until light golden.
- Now put tomatoes with ginger garlic.
- Then put salt, fenugreek seeds, red chili powder, all spice, cumin and coriander, stir it and cook masala.
- Then add potatoes and boiled eggs.
- Then put fenugreek seeds, coriander leaves and green chilies.
- Then serve with parathay.
