Anday Ki Karahi by Shireen Anwer

Ingredients:

  • Boiled eggs 6-8
  • Onion (large chopped) 1
  • Oil 1/2 cup
  • Potatoes (peeled & cubes) 2
  • Ginger garlic 1 tsp
  • Tomatoes chopped 4
  • Salt 1-1/2 tsp
  • Fenugreek seeds 1 tsp
  • Red chili powder 1/2 tsp
  • All spice 1/2 tsp
  • Cumin (roasted & crushed) 1 tsp
  • Turmeric 1/2 tsp
  • Coriander leaves chopped 1 bunch
  • Green chilies chopped few
  • Coriander crushed 1 tsp

Method:

  1. Heat oil and fry onion until light golden.
  2. Now put tomatoes with ginger garlic.
  3. Then put salt, fenugreek seeds, red chili powder, all spice, cumin and coriander, stir it and cook masala.
  4. Then add potatoes and boiled eggs.
  5. Then put fenugreek seeds, coriander leaves and green chilies.
  6. Then serve with parathay.
