Mushroom Spinach Lasagna by Zarnak Sidhwa

Ingredients:
- Spinach 1 bunch
- Mushrooms 1 tin
- Ricotta cheese or Soft cottage cheese 16 oz
- Parmesan cheese 5 tbsp
- Lasagna sheets 12
- Chopped onion 2
- Pasta sauce 1 cup
- Salt & black pepper to taste
Method:
- Wash spinach nicely and strain it.
- Now heat oil and cook onion and garlic until golden brown.
- Then add spinach and mushrooms and cook until water dries.
- Now add salt, black pepper and parmesan cheese and cook more for 3 minutes.
- Then add ricotta cheese or cottage cheese and remove from stove.
- Then boil lasagna sheets with salt water and some oil.
- Now strain it, keep big tbsp of mixture on each sheets and close in triangle shape.
- Then add pasta sauce, put again in triangle shape and bake in oven for 25 minutes.
- Then garnish with grated cheese and serve.
