Ingredients:

For Muffins:

  • Unsalted butter 12 tbsp
  • Caster sugar 1-1/2 cups
  • Eggs 3
  • Vanilla essence 1-1/2 tsp
  • Plain thick yogurt 1-1/4 cups
  • Flour 2-1/2 cups
  • Corn flour 1 tbsp
  • Baking powder 2 tsp
  • Baking soda 1/2 tsp
  • Salt 1/2 tsp

For Streusel:

  • Light brown sugar, packed 1/3 cup
  • Flour 2/3 cup
  • Ground cinnamon 1-1/2 tsp
  • Salt 1/4 tsp
  • Cold unsalted butter, cubed 4 tbsp

For Cream Cheese Glaze:

  • Cream cheese 3 oz
  • Butter 2 tbsp
  • Icing sugar 2/3 cup
  • Vanilla essence 1/4 tsp
  • Milk 3 tbsp

Method:

  1. Beat butter and sugar until light and fluffy.
  2. Then add eggs one by one.
  3. Now add vanilla essence and yogurt.
  4. Sieve flour, baking powder, baking soda and salt.
  5. Now add flour mixture in batter and mix it nicely.
  6. For streusel: Put all ingredients in bowl and mix with fingers.
  7. Now put 1/4 cup batter in each muffins.
  8. Then spread streusel.
  9. Then bake in oven on 180 degrees C for 22-25 minutes or until skew comes out cleanly.
  10. Now take out cupcakes from pan and cool on wire rack.
  11. For cream cheese glaze: Beat cream cheese and butter together.
  12. Now add icing sugar and beat it slightly.
  13. Then add vanilla essence and milk and beat until smooth.
  14. Now cool cream cheese glaze, spread on muffins and serve.
