Ginger Chicken Karahi by Zarnak Sidhwa

Ingredients:
- Chicken 1 kg
- Ginger paste 2 tbsp
- Garlic paste 1 tsp
- Onion chopped 1 large
- Water 1/4 cup
- Oil 3 tbsp
- Tomato paste 1 tbsp
- Kashmiri red chilies 1 tsp
- Red chili flakes 1 tsp
- Amchoor or khatai powder 1 tbsp
- Cumin seeds 1 tbsp
- Coriander seeds crushed 1 tbsp
- Mustard seeds 1 tsp
- Cinnamon stick 1
- Black peppercorns 4-6
- Cloves 4-6
- Bay Leaves 2-3
- Salt to taste
- Chopped coriander leaves handful
- Green chilies chopped 4-6
- Ginger 1 inch
Method:
- Marinate chicken ginger paste and garlic paste for 15-20 minutes.
- Heat oil in pan, add marinate chicken and saute it.
- Then add onion and cook for 4-5 minutes.
- Now add all dry ingredients and 3 green chilies and cook for 2-3 minutes.
- Now add tomato paste and mix it nicely.
- Then put water, sprinkle coriander leaves and ginger and add 3 green chilies.
