Ingredients:
For Base:
- Flour 8 oz
- Butter 4 oz
- Caster sugar 2 oz
- Egg yolk 1
- Vanilla essence 1 tsp
For Filling:
- Butter 4 oz
- Sugar 4 oz
- Eggs 2
- Coconut powder 2 oz
- Flour 2 oz
- Baking powder 1 tsp
- Coconut essence 1/2 tsp
Method:
- For base: Beat butter and sugar until light and fluffy.
- Now add egg yolk and beat more.
- Now fold vanilla essence in flour, knead it little and cool it for 15 minutes.
- Now roll this dough in 9 inch tart tray and spread it.
- Now spread strawberry jam on tart base, spread filling and bake on 180 degrees C for 25 minutes until it surface is light golden.
- For filling: Beat butter and sugar until light and fluffy.
- Now add egg yolks one by one and beat it.
- Then put coconut essence and fold stiff egg whites.
- Then sieve flour and baking powder, mix coconut powder and fold in butter mixture.
- Now put this filling on strawberry jam and bake it.
Coconut Jam Tart is a Baked Dish. It is Sweet Tart, filled with Coconut.
