Butterscotch Pudding by Zarnak Sidhwa

Ingredients:
- Packed dark brown sugar 1/2 cup
- Corn flour 3 tbsp
- Salt 1/4 tsp
- Milk 1-1/2 cups
- Cream 1/2 cup
- Unsalted butter 2 tbsp
- Vanilla essence 1-1/2 tsp
- Cream & Cocoa powder 1-1/2 tsp
Method:
- Put brown sugar, cornflour and salt in saucepan.
- Whisk to combine.
- Add 1/2 cup milk and whisk until combined.
- Add remaining milk and cream, whisking to combine.
- Bring to boil, whisking frequently.
- Boil, whisking constantly for 1 minute.
- Remove pan from heat.
- Add butter and vanilla and whisk to combine.
- Pour pudding into bowl.
- Cover with plastic wrap, pressing plastic wrap directly onto surface of pudding.
- Chill 2 hours before serving.
- Garnish with sweetened whipped cream and cocoa powder.
