Norwegian Fish Pie by Zarnak Sidhwa

Ingredients:

  • Unsalted butter 1 tbsp
  • Caraway seeds (Black cumin) 1/2 tsp
  • Flour 1 tbsp
  • Milk 500 ml
  • Cream cheese 100 gm
  • Black pepper to taste
  • Onion finely chopped 1
  • Tuna fish (drained & flaked) 1 can
  • Macaroni 2 cups
  • Dried bread crumbs 4 tbsp
  • Anchovy fillets 6-8

Method:

  1. Heat butter in pan.
  2. Add caraway seeds and fry for 1-2 minutes or until fragrant.
  3. Add flour and whisk to smooth paste.
  4. Combine to cook, stirring vigorously, then pour half milk.
  5. Whisk milk and flour mixture together to smooth paste.
  6. When mixture is bubbling, add remaining milk and whisk until it is bubbling and incorporated into mixture.
  7. Continue to whisk and simmer until sauce is smooth and thick enough to coat back of spoon.
  8. Remove pan from heat and stir in cream cheese.
  9. Season with salt and freshly ground black pepper.
  10. Add onion, tuna and boiled macaroni to cheese sauce and stir until well combined.
  11. Pour mixture into greased oven proof dish.
  12. Sprinkle over bread crumbs and lay anchovy fillet on top.
  13. Bake in oven for 30 minutes or until bread crumbs are crisp and golden brown and sauce is bubbling.
