Ingredients:
- Butter soften 7 oz
- Grated lemon rind 2 tsp
- Caster sugar 5 oz
- Eggs 3
- Flour 3/4 cup
- Self raising flour 3/4 cup
- Mix peel 1/3 cup
- Almonds 4 tbsp
- Milk 2 tbsp
Method:
- Grease 8 inch round pan nicely.
- Now line with paper and grease paper more.
- Then beat butter, caster sugar and grated lemon until light and fluffy.
- Now add eggs one by one and beat until it is mixed.
- Then fold self raising flour.
- Now put mixture in pan and bake on 180 degrees C for 20 minutes.
- Then sprinkle mix peel and almonds, bake more for 20 minutes, take out on wire rack and serve.
