Ingredients:

  • Butter soften 7 oz
  • Grated lemon rind 2 tsp
  • Caster sugar 5 oz
  • Eggs 3
  • Flour 3/4 cup
  • Self raising flour 3/4 cup
  • Mix peel 1/3 cup
  • Almonds 4 tbsp
  • Milk 2 tbsp

Method:

  1. Grease 8 inch round pan nicely.
  2. Now line with paper and grease paper more.
  3. Then beat butter, caster sugar and grated lemon until light and fluffy.
  4. Now add eggs one by one and beat until it is mixed.
  5. Then fold self raising flour.
  6. Now put mixture in pan and bake on 180 degrees C for 20 minutes.
  7. Then sprinkle mix peel and almonds, bake more for 20 minutes, take out on wire rack and serve.
