Handi Spiced Lamb by Chef Tahir Chaudhry

Ingredients:

  • Black pepper 1 tsp
  • Coriander seeds 1 tbsp
  • Cumin seeds 2 tsp
  • Fennel seeds 1/4 tsp
  • Cardamom pods 4
  • Cinnamon powder 1 tsp
  • Turmeric powder 2 tsp
  • Garlic paste 2 tsp
  • Oil 5 tbsp
  • Lamb meat 1/2 kg
  • Red chilies 2
  • Garlic 6 cloves
  • Whole cloves 4
  • Tomato 2
  • Onion 1
  • Salt 1 tsp
  • Water or Stock 200 ml

Method:

  1. Grind black pepper, coriander seeds, cumin seeds, fennel seeds and cinnamon powder, mix with cinnamon, turmeric and garlic paste and marinate lamb with this mixture.
  2. Then put onion, cloves and marinated lamb in deep frying pan, saute it for 4-5 minutes and add tomato, salt and oil.
  3. Now add water or stock, cook on low flame for 30 minutes and serve hot.
