Ginger Bread Pots by Zarnak Sidhwa

Ingredients:
- Flour 5 oz
- Wholemeal flour 5 oz
- Baking powder 1 tbsp
- Ground ginger 2 tbsp
- Cinnamon powder 1 tsp
- Light brown sugar 8 oz
- Eggs 2
- Honey 4 oz
- Unsalted burger melted 4 oz
- Milk 6 oz
- Chopped crystallized ginger 2 tbsp
For Drizzle:
- Icing sugar 5 oz
- Lemon juice 5 tbsp
Method:
- Sieve flours, baking powder, ginger and cinnamon in bowl.
- Beat eggs, add brown sugar, honey, melted butter and milk and fold in crystallized ginger.
- Spoon batter in cupcake cases, lined tin or pots.
- Bake at 175 degrees C for 20 minutes.
- Remove from tin and cool.
- For icing: Sieve icing sugar in bowl, add lemon juice, drizzle over top and serve.
