Ginger Bread Pots by Zarnak Sidhwa

Ingredients:

  • Flour 5 oz
  • Wholemeal flour 5 oz
  • Baking powder 1 tbsp
  • Ground ginger 2 tbsp
  • Cinnamon powder 1 tsp
  • Light brown sugar 8 oz
  • Eggs 2
  • Honey 4 oz
  • Unsalted burger melted 4 oz
  • Milk 6 oz
  • Chopped crystallized ginger 2 tbsp

For Drizzle:

  • Icing sugar 5 oz
  • Lemon juice 5 tbsp

Method:

  1. Sieve flours, baking powder, ginger and cinnamon in bowl.
  2. Beat eggs, add brown sugar, honey, melted butter and milk and fold in crystallized ginger.
  3. Spoon batter in cupcake cases, lined tin or pots.
  4. Bake at 175 degrees C for 20 minutes.
  5. Remove from tin and cool.
  6. For icing: Sieve icing sugar in bowl, add lemon juice, drizzle over top and serve.
