Keema Pulao by Zarnak Sidhwa

Ingredients:
- Mutton mince 200 grams
- Rice (soaked for 1/2 hour) 1-1/2 cups
- Oil 2 tbsp
- Green cardamoms 2
- Black cardamom 1
- Cloves 5-6
- Cinnamon 1 inch stick
- Black peppercorns 8-10
- Cumin seeds 1 tsp
- Garlic chopped 2 cloves
- Onion chopped 1 large
- Green chilies chopped 3
- Garlic paste 1 tbsp
- Ginger paste 1 tbsp
- Red chili powder 1 tsp
- Tomatoes chopped 2 large
- Mint leaves 15-20
- Coriander leaves chopped few
- Salt to taste
- All spice powder 1 tsp
Method:
- Clean rice, soak in water for 30 minutes, take it out and keep it aside.
- Heat oil in pan and saute all spice powder, green cardamom, black cardamom, cloves, cinnamon, black pepper, cumin seeds, onion, garlic cloves and green chilies.
- Now put mutton mince in pan, cook on high flame for few minutes, put ginger paste, garlic paste, red chili powder, tomatoes, 3-1/2 cup hot water, salt and soaked rice and mix with lightly hands.
- Cook rice on high flame.
- Then cover it and cook more for 10-12 minutes on low flame.
- Now add mint leaves and coriander leaves.
- Serve hot keema pulao with mix vegetable raita.
