Mutton Pulao by Zubaida Tariq

Ingredients:

  • Mutton 1/2 kg
  • Water 4-5 cups
  • Ginger 1 piece
  • Garlic 1 clove
  • Onions 2
  • Salt to taste
  • Coriander seeds 1 tbsp
  • Fennel seeds 1 tsp
  • Black cardamoms 4
  • Black pepper 4
  • Oil 1 cup
  • Onions finely chopped 3
  • Ginger garlic paste 1 tbsp
  • Yogurt 1/2 cup
  • Green cardamoms 6
  • Green chilies 4
  • Rice soaked 2 cup

Method:

  1. For stock: Put 4-5 cups water, mutton, ginger, garlic, onion and salt in pot.
  2. Then tie coriander seeds, fennel seeds, black cardamoms and black pepper in malmal cloth and put in water.
  3. When meat tender, take it out and drain water.
  4. Press malmal cloth in strainer and take out its arq.
  5. Now heat oil in pot, fry onion until golden brown, take out half onion and spread it.
  6. Put ginger garlic paste, yogurt, small cardamoms and green chilies in remaining onions and roast it slightly.
  7. Then add meat, again roast it slightly and add stock.
  8. When josh comes, take out rice from water and put it.
  9. Also put salt.
  10. When water dries, simmer it on tawa.
  11. When steam comes, mutton pulao is ready.
  12. Put fried onion when serve.
