Pulao Biryani by Shireen Anwer

Ingredients:

  • Rice 1/2 kg
  • Mutton 1/2 kg
  • Ginger chopped 1 tbsp
  • Garlic chopped 1 tbsp
  • Onion chopped 1
  • Salt 1-1/2 tsp
  • Mixed whole spices 1 tbsp
  • Caraway seeds 1 tsp
  • Bay leaf 1
  • Water 3 cups

For Biryani Masala:

  • All spice 1 tsp
  • Brown onion 1/2 cup
  • Ginger garlic 1 tbsp
  • Salt 1/2 tsp
  • Yogurt 1 cup
  • Oil 1/2 cup
  • Red chili powder 1-1/2 tsp
  • Green chilies 6
  • Coriander leaves 2 tbsp
  • Oil 1/2 cup
  • Kewra water 1 tbsp
  • Yellow color 1/4 tsp

Method:

  1. Add mutton, ginger, garlic, onion, whole spices, salt with 3 cups water in pan and cook until mutton tender.
  2. Now strain stock.
  3. Then soak for 30 minutes.
  4. Now cook in stock until it is ready.
  5. Heat oil in pan, add onion, ginger garlic, salt, red chili powder and yogurt.
  6. Now put fried meat.
  7. Then put all spice, green chilies and coriander leaves and make layer of half rice.
  8. For assemble: Put half rice in pan.
  9. Now add meat mixture and cover with remaining rice.
  10. Then put kewra and yellow color and simmer it.

Shireen Anwer has made Pulao Biryani with her own recipe. It has taste of Pulao & Biryani. You can make this dish at home on Eid-ul-Adha with Mutton or Beef.
