Korma Pulao by Shireen Anwer

Ingredients:

  • Rice (soaked for 30 minutes) 1/2 kg
  • Mutton 750 gm
  • Oil 3/4 cups
  • Onion ground 2
  • Onion sliced 2
  • Curd 1 cup
  • Nutmeg ground 1/4 tsp
  • Mace ground 1/4 tsp
  • Cloves 12
  • Green cardamom seeds 1 tsp
  • Ginger garlic 1 tbsp
  • Red chili powder 1 tsp
  • All spice 1 tsp
  • Milk 1 cup
  • Salt to taste

Method:

  1. Heat oil, put onion slice and fry onion until light golden.
  2. Now stir cloves, green cardamom seeds and nutmeg and fry it again.
  3. Now add mutton with salt and fry it nicely.
  4. Then mix curd and cover for 15 minutes.
  5. Now stir onion ground, ginger garlic, red chili powder, mace, all spice and salt.
  6. Now add 1 cup water, cover it and cook until meat tender.
  7. Then put soaked rice and 3 cup water, cover it and cook until it is ready.

Korma Pulao is another variety of Pulao. Shireen Anwer has made it with her own technique.
