Korma Pulao by Shireen Anwer

Ingredients:
- Rice (soaked for 30 minutes) 1/2 kg
- Mutton 750 gm
- Oil 3/4 cups
- Onion ground 2
- Onion sliced 2
- Curd 1 cup
- Nutmeg ground 1/4 tsp
- Mace ground 1/4 tsp
- Cloves 12
- Green cardamom seeds 1 tsp
- Ginger garlic 1 tbsp
- Red chili powder 1 tsp
- All spice 1 tsp
- Milk 1 cup
- Salt to taste
Method:
- Heat oil, put onion slice and fry onion until light golden.
- Now stir cloves, green cardamom seeds and nutmeg and fry it again.
- Now add mutton with salt and fry it nicely.
- Then mix curd and cover for 15 minutes.
- Now stir onion ground, ginger garlic, red chili powder, mace, all spice and salt.
- Now add 1 cup water, cover it and cook until meat tender.
- Then put soaked rice and 3 cup water, cover it and cook until it is ready.
Korma Pulao is another variety of Pulao. Shireen Anwer has made it with her own technique.
