Mutton Do Pyaza by Chef Gulzar

Ingredients:

  • Mutton with bones 1 kg
  • Onion slices 4
  • Yogurt 1/2 kg
  • Bay leaves 2-3
  • Whole red chilies 8-10
  • Finely chopped green chilies 8-10
  • Chopped ginger garlic 2 tbsp
  • All spice powder 2 tbsp
  • Whole black cardamom 3-4
  • Cinnamon 3-4
  • Whole black pepper corns 1 tsp
  • Ghee 1 cup
  • Salt to taste

Method:

  1. Put ghee in pot, add black cardamom, bay leaves, red chilies, black pepper and cinnamon and crackle it.
  2. Now add mutton and roast it.
  3. Then put ginger garlic and roast for 2-3 minutes.
  4. Now add yogurt and roast more for 2-3 minutes.
  5. Then add water as required and leave until meat tender.
  6. When meat tender, add onion, green chilies and salt, mix it nicely and cook until salan leaves oil.
  7. Now take out in dish.
  8. Mutton do pyaza is ready.

Chef Gulzar has made Mutton Do Pyaza with different technique. You can make it at home easily. It can be served on Eid-ul-Adha.
