Dal Pakwan by Zarnak Sidhwa

Ingredients:
For Daal:
- Bengal gram 1 cup
- Cumin seeds 1 tsp
- Oil as required
- Onion chopped 1
- Tomato 2
- Green chilies 4
- Ginger 1 piece
- Salt to taste
- Turmeric 1/2 tsp
- Red chili powder 1 tsp
- All spice powder 1 tsp
- Coriander leaves for garnish
For Pakwan:
- Flour 1 cup
- Salt 1/2 tsp
- Carom 1/2 tsp
- Oil for fry
Method:
- Soak gram for 20 minutes and cook until nicely soft, do not mash it.
- Heat oil, add cumin seeds, onion, tomato, green chilies and ginger and cook until all nicely soft.
- Then add salt, turmeric, red chili powder, all spice powder and gram and cook for 10 minutes.
- Now garnish with coriander leaves.
- For pakwan: knead flour, salt and carom and keep it aside for 10 minutes.
- Then roll into thin puri and prick with fork, so that it will not puff up.
- Heat oil and deep fry until golden brown.
- Now serve daal with pakwan.
Dal Pakwan is Sindhi Dish. It is popular breakfast or snack dish. Zarnak Sidhwa has made this dish with her own technique.
