Oven Roasted Chicken by Zarnak Sidhwa

Ingredients:
- Lemons rind grated juiced 2
- Olive oil 2 tbsp
- Rosemary leaves 2 tbsp
- Garlic cloves crushed 3
- Chicken cut into quarters 1
- Zucchini 3
- Capsicum 1
- Onions 3
- Potatoes 2-4
Method:
- Preheat oven to 210 degrees C.
- Combine lemon rind, juice, oil, rosemary and garlic in large bowl.
- Add chicken and turn to coat.
- Combine vegetables in roasting pan.
- Place chicken on top.
- Spoon over remaining oil mixture.
- Season with salt and pepper.
- Roast chicken and vegetables for 40 minutes.
- Transfer chicken to plate and cover.
- Roast vegetables further for 10 minutes.
- Place chicken and vegetables on plates.
- Spoon over pan juices and serve.
