Oven Roasted Chicken by Zarnak Sidhwa

Ingredients:

  • Lemons rind grated juiced 2
  • Olive oil 2 tbsp
  • Rosemary leaves 2 tbsp
  • Garlic cloves crushed 3
  • Chicken cut into quarters 1
  • Zucchini 3
  • Capsicum 1
  • Onions 3
  • Potatoes 2-4

Method:

  1. Preheat oven to 210 degrees C.
  2. Combine lemon rind, juice, oil, rosemary and garlic in large bowl.
  3. Add chicken and turn to coat.
  4. Combine vegetables in roasting pan.
  5. Place chicken on top.
  6. Spoon over remaining oil mixture.
  7. Season with salt and pepper.
  8. Roast chicken and vegetables for 40 minutes.
  9. Transfer chicken to plate and cover.
  10. Roast vegetables further for 10 minutes.
  11. Place chicken and vegetables on plates.
  12. Spoon over pan juices and serve.

Oven Roasted Chicken is mouth-washing dish. It is new variety of chicken. You can surprise your guest by making this dish.
