Ingredients:

  • Yogurt 1 cup
  • Chopped coriander leaves 1 bunch
  • Chopped carrot 2
  • Green onion 2
  • Potatoes 2
  • Green chilies 6
  • Curry leaves 6
  • Peeled peas 1/2 cup
  • Chopped broad beans 1/2 cup
  • Cauliflower 1 small
  • Turmeric 1 tsp
  • Ginger garlic paste 1 tbsp
  • White vinegar 2 tbsp
  • Gram flour 3 tbsp
  • Red chili powder 1/2 tbsp
  • Salt to taste

For Bhagar:

  • Oil 1 cup
  • Garlic cloves 3
  • Fenugreek seeds 6
  • Curry leaves 6
  • Button red chilies 8
  • Roasted coriander 1 tsp
  • White cumin 1 tsp

Method:

  1. Beat gram flour and yogurt nicely.
  2. Now add ginger garlic paste, red chili powder, turmeric and 4 cup water in it, strain in pot and boil it.
  3. Also put some oil or ghee on edges of pot, so that curry boils, it does not come out.
  4. Then put curry leaves, green chilies and vinegar when curry is boiling, when it boils, add salt.
  5. Also stir it.
  6. Then put coriander leaves, carrot, green onion, potatoes, peas, beans and cauliflower and cook on low flame.
  7. When all vegetables tender, sabziyon ki curry is ready.
  8. For bhagar: Heat oil, put all ingredients, fry until black and put in curry.
  9. In end, serve hot sabzi with plain rice.

Shahi Sabzi is healthy & tasty dish. It is vegetables curry dish and it is served with rice or roti. It can be served as light meal.
