Ingredients:

  • Potatoes 2
  • Eggplant 1
  • Carrots 2
  • Peas 1/2 cup
  • Chopped tomatoes 3
  • Whole red chilies 4
  • Mustard 1/2 tsp
  • White cumin 1 tsp
  • Red chili powder 1 tsp
  • Turmeric 1/2 tsp
  • Curry leaves few
  • Salt 1 tsp
  • Oil 1/4 cup

Method:

  1. Heat oil, put curry leaves, whole red chilies and white cumin and fry until brown.
  2. Now put vegetables and fry for 5 minutes.
  3. Then put mustard, red chili powder, turmeric and salt with 1 cup water and fry it.
  4. Now cover it and cook on low flame until all vegetables tender.

Mix Vegetable is delicious & healthy dish. It is prepared with 5 vegetables. It can be served as light meal and you can served with roti or rice.
