Ingredients:
- Potatoes 2
- Eggplant 1
- Carrots 2
- Peas 1/2 cup
- Chopped tomatoes 3
- Whole red chilies 4
- Mustard 1/2 tsp
- White cumin 1 tsp
- Red chili powder 1 tsp
- Turmeric 1/2 tsp
- Curry leaves few
- Salt 1 tsp
- Oil 1/4 cup
Method:
- Heat oil, put curry leaves, whole red chilies and white cumin and fry until brown.
- Now put vegetables and fry for 5 minutes.
- Then put mustard, red chili powder, turmeric and salt with 1 cup water and fry it.
- Now cover it and cook on low flame until all vegetables tender.
Mix Vegetable is delicious & healthy dish. It is prepared with 5 vegetables. It can be served as light meal and you can served with roti or rice.
