Cauliflower Pasta by Zarnak Sidhwa

Ingredients:

  • Chopped onion 1
  • Oil as required
  • Fresh bread crumbs 1 cup
  • Large cauliflower 1
  • Garlic cloves minced 5
  • Crushed red chilies 1/2 tsp
  • Salt to taste
  • Crushed black pepper to taste
  • Tomato paste 3 tbsp
  • Elbow macaroni 2 cup
  • Chopped tomatoes 1 cup
  • Chopped coriander leaves 1/2 cup
  • Grated parmesan cheese 1/2 cup

Method:

  1. Put bread crumbs with little oil in pan and cook on low flame until light brown.
  2. Now take crumbs from pan and keep it aside.
  3. Then heat oil in pan, add onion and garlic and cook until onion is soft.
  4. Then remove from stove, add cauliflower, red chilies, salt, black pepper,  tomato paste, tomatoes and water and cook until cauliflower tender.
  5. Boil macaroni in salted water.
  6. Now drain pasta and mix in cauliflower mixture.
  7. Now add coriander leaves, bread crumbs and parmesan cheese and mix it.
