Ingredients:

  • Jumbo prawns 200 gm
  • Dried prawns 1-2 tbsp
  • Rice noodles 1 packet
  • Cottage cheese 100 gm
  • Finely chopped garlic 1-2 tbsp
  • Eggs 2
  • Red chili powder 1/2 tsp
  • Ginger slice 1 inch
  • Chopped peanuts 1/2 cup
  • Sugar 1 tsp
  • Soya sauce 1 tbsp
  • Fish sauce 2 tbsp
  • Tamarind paste 2 tbsp
  • Coriander leaves 1/2 bunch
  • Lemon leaves 3-4
  • Vegetable oil 3-4 tbsp
  • Salt to taste

Method:

  1. Put noodles in hot water, put 2 tbsp oil and boil for 5-7 minutes.
  2. Then take it out and put in cold water.
  3. When noodles cools, take it out and keep it aside.
  4. Heat 1 tbsp oil in pan and fry chopped garlic.
  5. Now add jumbo prawns, stir it, remove it and keep it aside.
  6. Now heat 1 tbsp oil in other pan, put beaten eggs and mix it nicely.
  7. Then cut eggs into pieces and keep it aside.
  8. Now heat remaining oil in other pan and put dried prawns.
  9. Then add red chili powder and mix it.
  10. Now mix noodles and stir fry for 4-5 minutes.
  11. Then add ginger slice and 1/4 cup peanuts.
  12. Also add soya sauce, fish sauce and tamarind paste and mix it nicely.
  13. Now add prawns, cottage cheese and eggs mixture and mix it.
  14. Then take out from dish, garnish with 1/4 cup peanuts, lemon le3aves and coriander leaves and serve.

Thai Fried Noodles is tasty dish. The combination of cheese, peanuts, fish sauce & soya sauce in flavorful & delicious. It is stir fried.
